Santa Fe Stew

Ingredients

    1.5 lb ground turkey
    3 lg onions chopped
    6-8 lg carrots chopped
    1 tsp chilli powder
    1-2 tsp groung cumin
    1 tsp black pepper
    1/2 tsp ground red pepper
    2 TBSp dried herbs Italian mix
    1 can (15 oz) black beans undrained
    1 can (15 oz) kidney beans undrained
    1 can (15 0z) cannellini beans undrained
    2 cans (28 oz) diced can tomatoes undrained
    1 can corn undrained
    2 cups chicken broth

Directions

Cook turkey until lightly browned, about 8 min.
Add onion & carrots, cook 5 min more
Stir in chili powder, cumin, peppers, dried herbs, bean, tomatoes, corn & broth
Simmer 2 hours uncovered (if mixture is too thick, add water)
Serve stew in bowls or over rice.

  • I've been making this soup for years and it is one of our all time favorites. Only difference is I use 1 can of Rotel tomatoes in place of 1 of the cans of tomatoes. Also use no salt beans and corn to cut down on the sodium. Yummy!! - 1/21/12
