Russian Borscht

Ingredients

    3 cups diced potato
    1 medium head cabbage
    1 medium onion
    3 celery stalks
    2 cups diced carrots
    1/4 cup fresh dill
    1 -10 0z. can tomato soup
    8 cups water ( approximately)
    salt to taste
    2 tbsp oil


Directions

In a Dutch oven, cook diced potatoes. While cooking, shred cabbage. In a frying pan saute cabbage, onions, and celery in oil till cooked not browned. Add tomato soup and simmer for 10 minutes. Add cabbage mixture to cooked potatoes;bring to a boil again. Add dill and salt. Cook for 60 -90 minuts
Serves 12 1 cup servings.
