Introduction

This recalculates the nutrition from the already posted Lentils & Leeks, just taking into consideration the reduced oil. This recalculates the nutrition from the already posted Lentils & Leeks, just taking into consideration the reduced oil.
Number of Servings: 6

Ingredients

    2 lbs leeks- sliced 1/2" thick
    2 lg peeled carrots- sliced
    1/4 cup olive oil
    4-1/2 cups water
    1 cup lentils
    1 tbsp tomato paste
    1 tsp sugar
    1 1/4 tsp salt
    freshly ground pepper

Directions

In a large sauce pan or skillet, toss leeks and carrots with oil.
Cook over medium heat for 5 min. until lightly browned.
Stir in remaining ingredients.
Cover pan and simmer for 1 hour until lentils are tender & liquid is mostly absorbed.
Do not stir to keep lentils intact.
Enjoy!
