Thick as Fog Split Pea with Asparagus

Introduction

This is a variation on the packaged Split Pea Soup mixture by Bean Cuisine. This is a variation on the packaged Split Pea Soup mixture by Bean Cuisine.
Number of Servings: 5

Ingredients

    *Extra Virgin Olive Oil, 1 tbsp *Red Onions, 1 cup chopped
    Asparagus, fresh, .75 cup chopped
    *Baby Carrots - 1 cup chopped
    Garlic Cloves - 3 pressed cloves and discard skins
    *Mediterranean Sea Salt 0.75 tsp
    *Imagine Organic Vegetable Stock, 2 cup and another 3/4 cup during simmering as soup evaporates
    Water, tap, 2 cup (8 fl oz)
    *Bean Cuisine - Thick As Fog Split Pea Soup -- 1 cup dried split peas
    Bean Cuisine Split Pea Spice packet - 1/2 packet
    *Mustard, Yellow, Dried, .33 tbsp
    Crushed pepper add for taste
    Croutons (optional)
    Chopped Parsley (optional)

Directions

In stock pot heat oil and saute vegetables and pressed garlic for five minutes on med. high heat. Add water and vegetable stock along with 1/2 spice packet to pot and bring to boil.
Simmer covered for 1.5 hours until beans are tender stirring frequently. Puree soup mixture in blender. Salt and pepper to taste. Garnish with croutons and chopped parsley.
The asparagus can be substituted with celery.
