Shannon's Butter Beans

Ingredients

    1 lb frozen butter beans, thawed or 1lb dried, soaked
    2 carrots, chopped
    2 stalks celery, chopped
    1 large onion, chopped
    3 slices fakin bakin
    1 bay leaf
    4 T. olive oil
    salt and pepper

Directions

Saute carrots, celery and onion in olive oil in large dutch oven. Add beans and bay leaf. Fry fakin bakin in cast iron skillet in a little canola oil. Chop and add to pot. Simmer 30 min and season with salt and pepper.
