Introduction

A fast easy vegetarian soup/stew! You can vary the recipe to include whatever veggies you have on hand. The spices are approximate (I just throw them in without measuring). Number of Servings: 6

Ingredients

    2 tbsp olive oil
    1 onion chopped
    3 garlic cloves minced or pressed
    2 cups vegetable broth
    6 small potatoes
    1 can stewed tomato
    1 can diced tomato
    1 can green beans
    3/4 cup chopped green pepper
    1/2 cup frozen edamame
    1/2 cup frozen corn
    Italian seasoning mix to taste
    Red pepper flakes to taste
    Sea salt to taste
    Cracked black pepper to taste
    Cumin to taste

Directions

In a large pot over medium heat warm olive oil, add onions and garlic until onions are translucent, add all other ingredients to pot.

Increase heat until boiling, reduce to low heat, add a bay leaf and let simmer for 1 hour or until potatoes are the cooked.

Remove bay leaf and serve with warm corn bread!

Makes 6 1-cup servings
