Introduction

A bit of an indulgence with the sugar and chocolate, but lightened up using applesauce instead of oil. Whole-wheat flour and pecans add nutrition to the already-healthy pumpkin. Ingredients

    3 c sugar
    1 c unsweetened applesauce
    1 15 oz can pumpkin
    3 1/3 c whole wheat flour
    1 t salt
    2 t baking soda
    1 t nutmeg
    1 t cinnamon
    2/3 c water
    3/4 c Ghirardelli 65% cacao chocolate chips
    3/4 chopped pecans

Directions

In medium bowl, combine flour and spices; set aside. In large bowl using electric mixer, combine sugar and applesauce. Add pumpkin and mix to combine. Alternately add flour mixture and water. Stir in nuts and chocolate. Pour into two standard (9 x 5) or four miniature (7.5 x 3.5) loaf pans sprayed with cooking spray. Bake in 350-degree preheated oven for 55-60 minutes for standard loaves or 45-50 minutes for mini loaves. Bread is done when toothpick inserted near center comes out clean.
