IntroductionMy grandmother would make us kids this dish. This is my best guess of how she prepared it...with a few improvements. My grandmother would make us kids this dish. This is my best guess of how she prepared it...with a few improvements.
1/2 lb Barilla Plus elbow macaroni
1/8 C extra virgin olive oil
4 large garlic cloves
1/4 C finely chopped flat-leaf parsley
freshly ground black pepper
2 C stewed tomatoes, no added salt
Place a large skillet over medium-high heat. Add olive oil and garlic saute. Add reserved pasta water to the mixture and then the pasta, parsley, salt and pepper. Toss together and cook for 1 minute so that the pasta has a chance to soak some of the liquid. Remove from heat and add tomatoes.
This is great warm or cold.
