Southwestern Style Mini Meatloaf Portions

Ingredients


    * Milk, nonfat, .25 cup (remove)
    * *Fresh Zuchinni and/or Squash, 1 cup (remove)
    * Sweet Corn, Fresh, .5 cup (remove)
    * *Turkey, Ground turkey, 93% lean, 20 oz (remove)
    * Egg, fresh, 1 large (remove)
    * Bread, whole wheat (including toast), .7 oz (remove)
    * Salt, 1 tbsp (remove)
    * Pepper, black, .25 tsp (remove)
    * Onions, raw, .5 cup, chopped (remove)
    * *Old El Paso Taco Seasoning Mix (40% Less Sodium), 5 tsp (remove)

    For glaze:
    * *Ketchup, Heinz, 2 tbsp (remove)
    * *Salsa, 1 tbsp (remove)
    * Lea & Perrins, Worcestershire Sauce, 2 tsp (remove

Directions

Preheat oven to 37five.

Tear up bread into small pieces. Transfer into a bowl and poor milk over it. Cook onions until golden. Add zuchinni and cook until wilted.

Transfer to bowl with milk and crumbs. Mix all ingredients except the sauce ingredients. Portion into 4 mounds. Bake for approximately 40 minutes. Use sauce as a glaze. Apply it as they cook.
