Baked Mahi Mahi with wine and herbs

Introduction

Recipe adapted from a food network recipe, they use vermouth and thyme. I didn't have either so I adapted it to work with what I had. Very tasty dish. Would be great with chicken broth as well. Ingredients

    8 sprigs parsley
    3 bay leaves (preferrably fresh)
    8 cloves garlic smashed
    4 3oz pieces of Mahi Mahi
    3/4 Chardonay (or chicken broth)
    2 tbsp olive oil
    salt and pepper to taste

Directions

Preheat oven to 450 degrees

Line baking dish with parsley sprigs, bay leaves and smashed garlic. Season mahi mahi to taste with salt and pepper lay on top of herbs. Drizzle 1 Tbsp olive oil over fish and pour wine into dish. Cover loosely with foil.
Bake 15 minutes or until fish is flaked easily with fork.

Drain liquid from baking dish into a small sauce pan. Bring sauce to a simmer, reduce liquid by half. About 5 mins. Add lemon juice and 1 Tbsp of olive oil, season with salt and pepper if needed. Serve sauce over fish.
