Beery Good Chili

Submitted by: DRAE2409

Introduction

This came from a friend's sister and has been perfected. I don't know how much a serving is...maybe a cup? This came from a friend's sister and has been perfected. I don't know how much a serving is...maybe a cup?
Number of Servings: 8

Ingredients

8 oz IPA beer (others work fine, but IPA is the flavor desired)
1 lb lean ground beef (6-7% fat)
1 Tbsp olive oil (or less)
    1/2 onion, diced
1/2 sweet pepper (red, orange, or yellow all work)
    2 cloves garlic, minced
1 15oz can dark kidney beans (drain, but don't rinse)
1 15oz can black beans (drain, but don't rinse)
1 15oz can pinto or chili beans (if chili beans, do not drain/rinse; pinto beans drain, but don't rinse)
    1 28oz can diced tomatoes
    1 6oz can tomato paste
3-4 Tbsp chili powder (or to taste)
2-3 tsp cumin (or to taste)
    Salt/pepper to taste

Directions

Open cans of beans, tomatoes, and beer. Drain beans and set aside. In a large pot, saute onion and pepper in olive oil unless soft. Once soft, add garlic and saute for 1-2 minutes. Do not burn garlic. Add ground beef, chili powder, cumin, and salt and pepper, cooking until beef is no longer pink. Add beer and let cook down for 2-5 minutes, until mixture thickens up. Stir in remaining ingredients (all the canned stuff) and simmer until chili reaches desired thickness. Good right away, but better after an hour, and best the next day!

Top with your favorites (not included in calories) and partner with cornbread (not included but there are some GREAT SP recipes for that!). Enjoy!
