Toasted Cashew Kale

Introduction

A tasty side that complements any meat dish. Has a mediterranean flavor to it. A tasty side that complements any meat dish. Has a mediterranean flavor to it.
Number of Servings: 2

Ingredients

    2 tbsp olive oil
    1/8 cup chopped cashews, dry roasted and salted
    1/4 cup onion chopped
    1 tbsp chopped garlic
    1 Bunch of kale, chopped, about 4 cups
    1 tsp crushed red pepper flakes

Directions

Sautee chopped cashews in olive oil until toasted.
Remove and set aside.
Saute garlic in olive oil and then add the onion. Cook until they are about translucent.
Add the crushed red pepper.
Add the Kale and coat evenly with oil.
Stir fry until the Kale shrinks to about 1/2 its original size.
Stir in cashews.
Makes 2 servings.
