Introduction

A medley of tubers cooked from scratch. A medley of tubers cooked from scratch.

Ingredients

    1 rutabagas (1 1/4 cp diced)
    3/4 - 1 cp diced parsnip
    1 parsnip (1 cp diced)
    1 med butternut squash (2 cp diced)
    2 med red potatoes (2 cp diced)
    1 1/2 cp raw onion (diced)
    1/3 cp olive oil
    salt to taste (about 2 tsp)

Directions

Combine diced vegetables in large baking dish.
Cook at 350 until tender
Serve immediately
