Spinach Onion Soup

Introduction

This is a nice healthy soup (we used or own homemade chicken broth). Great for those cold days. This is a nice healthy soup (we used or own homemade chicken broth). Great for those cold days.
Number of Servings: 8

Ingredients

    2 tbs olive oil
    3 tbs butter
    4 cups of slice onions
    1 large clove of garlic
    1 tsp salt
    1 tsp black pepper
    1.5 tbs of flour
    1 cup of dry red wine
    6 cups of broth
    1 large package of spinach
    1 tsp of pastina per person

Directions

Slowly heat oil and butter in large saucepan. Add onions, cover and saute slowly for 12 minutes. Uncover and continue to cook slowly to medium dark brown (secret is taking the time to caramelize the onions... don't try o rush this) Add garlic, slat, and pepper. Sprinkle in flour and stir. Add wine and simer for 3 minutes. Add boiling broth, spinach, and pastina. Cook for about 6 minutes. Serve with grated parmesan cheese and crusty bread.
