Lentil Soup

Introduction

Warm and satisfying soup thats perfect for all your vegan friends and meatlovers too. Warm and satisfying soup thats perfect for all your vegan friends and meatlovers too.
Number of Servings: 4

Ingredients

    1 Tbsp olive oil
    1 onion, chopped
    2-3 cloves garlic, minced
    2 cups dried lentils, washed
    1 carrot
    1 bay leaf
    2 cups of water or vegetable stock
    2 tsp salt (preferably sea salt) or to taste
    pepper to taste

Directions

Heat the oil in a large soup pot and add onions. cook until they soften about 3-5 minutes. Add spices and cook a minute longer. Add water or stock. Stir in the lentils, carrot, and bay leaf. Bring to a boil and simmer 30 minutes to an hour and a half. Remove bay leaf and serve. Serves 4
