Spicy Chicken Soup



Introduction

This is such a comforting, hearty soup that, if you like spicy, will satisfy you as well as clear your sinuses. :-) This is such a comforting, hearty soup that, if you like spicy, will satisfy you as well as clear your sinuses. :-)
Number of Servings: 6

Ingredients

    10 oz boneless, skinless chicken breast, diced
    1/2 tsp olive oil
    3 medium carrots, sliced
    2 medium parsnips, sliced
    3 stalks celery, sliced
    1 large onion, chopped
    3 cloves garlic, grated
    1 14 oz can diced tomatoes, with juice
    1 tsp red pepper flakes
    4 cups water

Directions

Cut uncooked chicken breast into small, bite-sized pieces. In stew pot or deep 12" pan, saute chicken in 1/2 tsp oil for about 5 minutes, set aside.

Prepare the 2 teaspoons Chicken bullion in 4 cups of hot water, set aside.

In same pot or deep pan, saute onions, carrots, parsnips for about 5 minutes. Grate it the garlic and stir to blend. Add can of tomatoes, red pepper flakes, and the chicken. Add the chicken stock.

Heat to boiling and simmer for 15 minutes and enjoy!
