6-8 Medium Mushrooms, fresh - sliced
1 medium Onion - diced
1.5 T Olive Oil
6 Morning Star Maple Sausage patties (1 pkg)
1 10 oz pkg frozen spinach - thawed and squeezed of excess liquid
6 extra large eggs
1/2 - 3/4 cup lowfat cottage cheese
1/4 cup shredded parmesan cheese
remove from skillet
brown morningstar sausage patties then crumble
blend cottage cheese and eggs until cottage cheese is not distinquishable.
lightly coat pie plate with oil or spray,
add mushrooms and onions, sausage and spinach
pour egg and cottage cheese over top
sprinkle parmesan over egg mixture
Bake in 400 F oven for 20-30 minutes or until center of quiche is no longer "jiggly"
cool for 10 minutes before cutting.
