PJ Mac's Pasta Primavera

Introduction

Number of Servings: 8

Ingredients

    3 Tbspoons olive oil
    1 onion, sliced
    Red pepper flakes to taste
    1 red bell pepper, sliced
    1 can green chillies
    1 can black olives, quartered
    1 can asparagus (or fresh), sliced
    20 cherry tomatoes, quartered
    16oz shoe peg corn (or 1 can whole kernal)
    14.5 Barrilla pasta plus
    2 cups vegetable broth or stock
    2 Tbsp almond milk

Directions

Saute vegies in 2 Tbsp olive oil. In the meantime cook pasta according to directions. Once veggies are desired doneness.add to drained pasta. Stir in salt and pepper to taste. Add vegetable broth or stock and almond milk. Stir all together and serve. Makes 8 servings
