Breakfast Burrito

Introduction

Deliciously filling with spinach, peppers, onions, eggs, sausage,and cheese. Wrapped in a very tastey and unbelievabley high fiber tortilla. No sacrifices here. Ingredients

    1 Tbs. Olive oil
    1/2 Large red pepper, diced
    1/2 Large white or yellow onion diced
    1/2 C. Jimmy Dean Turkey Sausage Crumbles
    4 Extra Large Egglands Best Eggs
    2 oz. Milk, 1%
    Black Pepper, Fresh Ground to taste
    20 leaves Organic Baby Spinach, Fresh, snipped w/ shears
    1/4 C. Cheese, shredded, Kraft Four Cheese Mexican style
    2 Tortillas, Large whole wheat, La Tortilla Factory

Directions

Makes 4 half burrito servings.
In a large skillet, saute Red Pepper and Onion until translucent.
Remove to a small bowl. Add sausage crumbles to the skillet and warm. (they are precooked)
Whisk Eggs, Milk and Black pepper in another bowl then add to skillet. Snip the spinach over the mixture.(Never over stir eggs, it makes them tough) Cook over medium heat until mostly set. (Eggs continue to cook after removed from heat) Place the egg mixture aside in another bowl. Place the tortillas one at a time into the empty skillet to warm. Sprinkle with 1/2 the cheese. When cheese begins to melt, remove tortilla to a plate and fill with half the egg mixture and half the onion & pepper mixture. Roll it up. Repeat with 2nd tortilla. Slice both in half on the diagonal . Serve with fresh berries or orange slices.
