Introduction

This is comfort food that won't make you feel guilty. I re-made this recipe with less pasta, more cauliflower, less breadcrumbs, less olive oil, and reduced fat cheese. Ingredients

    8 oz. macaroni
    1 head cauliflower, rough chopped
    1/2 c. breadcrumbs
    2 TBS olive oil
    1 onion, finely chopped
    1 1/2c. grated sharp cheddar, 75% reduced fat
    1 1/2 c. reduced fat sour cream
    1/2 c. skim milk
    1 TBS. mustard

Directions

Makes 6 1 1/2c. servings

Heat oven to 400.
Cook pasta - add cauliflower during the last few minutes of cooking; Drain

Add 1 TBS olive oil to breadcrumbs with salt and pepper, set aside.

In pasta pot, add 1 TBS. olive oil; Saute onions until soft.

Mix in pasta, cauliflower, cheese, sour cream, milk, and mustard.

Transfer to shallow 3 qt. baking dish, sprinkle with breadcrumbs, and bake until golden brown. 15 to 20 minutes.
