Introduction

Number of Servings: 12

Ingredients

    2 cups whole wheat flour
    1 tbsp baking powder
    1 tsp salt
    1/4 cup sugar
    1 cup buttermilk
    1/2 cup (1 stick) butter (unsalted), melted
    1 tsp vanilla extract
    Reduced sugar jam, any kind

Directions

Makes 12 muffins.

Grease or line the muffin pan with paper baking cups. Preheat the oven to 450°.

Stir and toss together the flour, baking powder, and salt until completely mixed. Place the sugar, eggs, buttermilk, butter, and vanilla in a large bowl and mix well. Add the combined dry ingredients and beat just until the batter is blended; it should not be completely smooth.

Fill the muffin pans 1/3 full of batter, top with a teaspoon of jam or preserves, taking care not to touch the sides of the muffin cups with jam. Spoon the remaining batter carefully over, covering the jam to "seal" and bake as directed.
