Morning Glory banana nut bread

Number of Servings: 24

Ingredients

    2 mashed Bananas
    1/3 c. Pineapple, canned, )
    2 raw Carrots, grated
    2 egg,s
    1/2 cup Margarine butter blend, 60% corn oil margarine and 40% butter,
    1 c.brown Sugar, unpacked
    2 c, unbleached, all-purpose flour (can be 1/2 wheat and 1/2 white)
    1 TB Molasses
    2 tsp Baking Powder
    1 tsp Baking Soda
    1 tsp. Salt,
    1 tsp Vanilla Extract
    1/2 c. Pecans, chopped
    1/3 c, Coconut, shredded
    1 tsp. Cinnamon, ground
    1 TB. Orange Peel
    1/2 c. raisins

Directions

Preheat oven to 350 degrees. Grease 2 loaf pans.
Mix the bananas, pineapple, carrots, eggs, sugar, vanilla and molasses together in a bowl until smooth and well blended.
Mix all the dry ingredients but the nuts together.
Add the fruit mixture slowly and fold in coconut, pecans and raisins in. Beat about one minute.
Pour slowly into the loaf pans (each should be about 1/2 full).
Bake for about 40 - 45 minutes or until done.
Cool, and ice with a cream cheese frosting if desired.
