Tuna Steaks with PeppersSubmitted by: GDSMITH54873
2 tuna steaks (3-4 ozs. each)
1/4-1/2 c. thinly sliced red sweet pepper
1/4-1/2 c. thinly sliced orange or yellow pepper
1/4 c. thinly sliced red onion
1/4 c. chopped fresh cilantro
Emeril's Essence (spice mixture)
3 T. olive oil, divided
Juice from one lemon
2 T. white wine
Liberally coat both sides of the tuna with Emeri'ls Essence. Heat a non-stick fry pan with remaining oil. Saute tuna on one side for a couple minutes then turn. Cook until medium rare. The center will still be very pink but the outer edges will be white.
Place steaks on a platter and top with the pepper and onion mixture.
