No Cream Pasta Primavera

Introduction

Number of Servings: 6

Ingredients

    1 box penne pasta
    1 yellow squash, chopped
    1 zucchini, chopped
    1/2 red bell pepper, cut in strips
    1/2 yellow bell pepper, cut in strips
    1 roma tomato, diced
    1/4 c. olive oil, divided
    1/4 tsp salt
    1/4 tsp black pepper
    1/2 tbsp lemon juice
    1 tbsp italian seasoning
    1 tbsp margarine
    1/4 lg. onion, diced
    1 clove of garlic, minced
    2 tsp. lemon zest
    3 tbsp balsamic vinegar

Directions

Preheat oven to 450 degrees, line a baking pan with foil. Toss veggies with 2 tbsp olive oil, salt, pepper, lemon juice, and italian seasoning. Meanwhile, cook pasta per directions. Heat remaining olive and margarine in large skillet. Add onions and garlic and saute. Mix in cooked pasta, lemon zest, and vinegar. Heat through then toss with roasted veggies. Serves 6.
