Just toss it all together in a casserole dish, stir, and bake at 350 for 50 minutes. Serve it up with some yummy low fat tortillas or on lettuce leaves, or your fave light Mexican food toppings. Ingredients

    8-9 boneless skinless chicken breast tender strips raw
    (2.5-3 chicken breasts)
    1 can of your favorite black or other beans
    1/2 can of diced tomatos with chili's
    1Tbsp. fresh cilantro diced
    1/2 cup your favorite rice
    1/2 cup water
    salt
    pepper
    paprika
    chili powder

Directions

stir together all ingredients including liquid from the cans of tomatoes and beans, leaving out the chicken, season the chicken and lay it on top of the mixture. (it might sink, that's ok) cover with foil, bake at 350 for 45-55 minutes, until rice is done.
