1 Pound uncooked Turkey Breast
1 Tbsp Canola Oil
1/2 Cup Scallions, sliced
2 medium Garlic Cloves, minced
1 tsp Ground Cinnamon
1 tsp Ground Coriander
1 tsp Ground Cumin
1 tsp Ground Oregano
1 tsp Dried Thyme
1 Cup Salsa, thick and chunky style
1 large Mango, cubed
2 Cups cooked Brown Rice (kept hot)
Add oil to skillet and heat until sizzling. Stir in scallions, garlic, cinnamon, coriander, cumin, oregano and thyme; cook, stirring, for 2 minutes more. Serve over brown rice.
Yields about 3/4 cup of stew and 1/2 cup of rice per serving.
