Sausage kale soup

Number of Servings: 6

Ingredients

    1 lb lean turkey sausage (5-6 links)
    1 large bunch of kale (approx 6 cups), deveined & chopped
    2 T extra virgin olive oil
    8 cloves garlic, chopped
    2 cups (1 can) cannellini beans
    2 cups chopped onion
    1 chopped celery stalk
    6 cups low sodium chicken broth
    2 cups (1 can) diced tomatoes, no salt added
    1 bay leaf
    1 tsp thyme
    1/2 tsp cayenne or red pepper flakes
    3-4 T. balsamic vinegar

Directions

Brown turkey sausage in pan with Pam or olive oil. Slice into bite size portions.

Heat oil over mod heat. Saute garlic til golden (1 min). Add onion and celery and saute onion til soft. Add beans, broth and sausage and simmer 20 minutes, covered. (Add 1-2 C. water if you like it thinner). Add kale and simmer uncovered til tender (5-7 minutes). Add salt, pepper and vinegar to taste.
