Introduction

This is my version of the Sante Fe Rice and Beans dish. A great way to use up leftover rice! Low fat & made my picky teenage daughter go "Mmmm yum yum".

Number of Servings: 5

Ingredients

    About 2 cups white rice cooked
    One and a half large onion chopped
    Garlic 3 cloves
    Baby Corn- Birdseye- three quarter cup
    1 can black beans
    1 can pinto beans
    1 and a half oz Mozzarella cheese
    1 and a half oz Cabot sharp cheddar cheese
    Olive oil
    Chili powder
    Oregano
    Cumin
    Salt

Directions

This makes around 5 servings~

I like to use leftover rice for this meal, it's a great way to use it up!

Saute onions in extra virgin olive oil, add garlic crushed, when onions are soft add to cooked rice.
Mix in black beans, pinto beans & baby corn.
Add 1/4 cup of lite sour cream.
Mix in spices.

Put in shallow baking dish & sprinkle cheese on top, cover with aluminum foil & bake at 375 15 minutes.
