Broccoli Soup

Introduction

Pureed Brocolli Soup Pureed Brocolli Soup
Number of Servings: 3

Ingredients

    1 Whole head of Broccoli (Chopped)
    1 Medium Brown Onion (Chopped)
    40 grams of Butter
    2 tsp Chicken Stock
    2 cups Water
    1/2 tsp of Crushed Garlic
    1 tsp Coriander puree
    1/4 tsp Curry Powder
    1/4 cup Milk

Directions

Melt butter in saucepan, add Onion.
Cook for 2-3 minutes, add chicken stock, curry powder and stir briefly.
Add water and Broccoli and bring to the boil.
Reduce heat and simmer for 10-12 minutes or until Broccoli is cooked thru.
Allow to cool slightly then add Garlic, Milk and Coriander and blend.
