Introduction

Number of Servings: 6

Ingredients

    4 cups skim milk
    4 1/2 tbsp. rice flour
    4 cups (454 grams) brown rice elbow pasta
    13 oz (375 grams) grated, light cheddar cheese, divided
    boiling water for pasta

Directions

In saucepan, combine milk and rice flour. Heat on medium, stirring constantly until milk thickens. Add 1 cup light cheddar cheese and stir until melted and combined.
Cook pasta in 4 quarts of salted boiling water until tender. (approx 17 min.) drain and rinse with cold water.
Pour pasta and cheese sauce into a large round casserole dish and mix thoroughly. Cover casserole with remaining 2 cups of light cheddar cheese. Bake 45 minutes in a 400 degree oven. Let sit for 5 minutes before serving. 1/6th serving equals 535 calories
