Stuffed Cabbage

Introduction

Ingredients

    1 1/2 lbs ground turkey
    1 1/2 c. cooked rice
    16 oz. can tomato sauce
    1 packet onion soup mix
    1 head cabbage, cored
    32 oz. jar sauerkraut
    bacon

Directions

Place cabbage in large pot of boiling water and remove leaves as they come loose from the head. Drain leaves.

Combine ground turkey with rice, onion soup mix and 2 tbsp of the tomato sauce; form into 2 inch (or slightly smaller) balls. (approx. 14) Wrap meat balls in cabbage leaves and place in a large dutch oven. Arrange left over cabbage around in pot. Top with sauerkraut, the remaining tomato sauce, and place a layer of bacon strips across the top. If using turkey bacon, you may want to cover with a sheet of parchment paper. Bake at 350 for 1 1/2 to 2 hours.

Makes approx. 7 servings.
