Cheese Grits Casserole.

Ingredients

    3 C. Water

    3/4 C. Quick Grits.

    2 C. Sharp Cheddar Cheese, shredded or diced.

    3/4 C. Carb Hood Non-Dairy Beverage, Low Fat.

    2 Pats Butter, lightly salted preferably.

    2 Lrg. Eggs or 1/2 Egg Beater's.

    6 dashes of Hot Sauce.

    1/8 tsp. Black Pepper or Red if prefer it spicier.

Directions

Heat the Water to a boil, in a large or deep sauce pan. Add the Grits slowly, stirring constantly to prevent sticking. Reduce heat under the pan, and stir cooking about 5 min.

Add 1 C. of the Cheese, Milk, and Butter; stirring often to mix well and prevent sticking to bottom of the pan. Add the slightly beaten eggs or egg substitute, spices, garlic; and stir well. Low turn off the heat and prepare a baking dish with PAM Non-Stick Spray or Oil, to again- prevent sticking and ease of serving and clean up- Pour the ingredients into the baking dish and bake at 375 degrees for 30-35 min. Until golden brown and firm to the touch. Turn of the oven-

You now add the remaining Cheese and leave sit in the cooling oven until the Cheese is nicely melted, but not browned! Remove from the oven and let cool slightly to make easier serving without too much mess of the portions.

This is an all around Southern Favorite that can be topped with almost anything you would use with a Potato Baked. Additionally, it keeps and Freezes well for Pot Lucks, Special Breakfasts, or other Meal Occasions. I have also seen my Grandmother use this Recipe or similar with or without the Cheese as a Griddle Cake, simply pour and cook Ingredients into an Oiled Skillet and cook like a Pancake or Griddle Cake. The Plain Variety can be served with Syrup, or Cinnamon & Butter, Apple Butter- the variations are endless & FUN. ENJOY!
