Deviled Chicken

    2 bone-in chicken breasts
    1/2 tsp pepper
    1/4 tsp salt
    Cooking Spray
    2 TBP prepared mustard
    2 (1-oz) slices French Bread Baguette


1. Preheat oven to 475F
2. Sprinkle chicken with salt and black pepper; lighly coat with cooking spray.
3. Place chicken on rack of broiler or roasting pan coated with cooking spray. Bake at 475F for 15 minutes; remove pan from oven.
4. Combine mustard and red pepper in a small bowl, brush over chicken. Place bread in a food processor, pulse 10 times or until you have 1 cup of crumbs. Sprinkle crumbs evenly over mustard mixture on chicken, pressing lightly to adhere. Lightly coat with cooking spray. Return pan to over. Bake at 475F for 10 minutes or until breadcrumbs are browned and a thermometer registers 165F. Yield: 2 servings
