Egg Rice Scramble

Introduction

This seems a little high in calories, but its overall nutritive value is amazing. This seems a little high in calories, but its overall nutritive value is amazing.
Number of Servings: 2

Ingredients

    1 Tbsp. Olive oil
    3/4 cup chopped onion
    2 oz. diced turkey ham
    2 large eggs
    1 cup brown rice
    1 cup frozen mixed vegetables
    1/4 cup shredded cheese

Directions

Heat olive oil in pan. Add onions and cook until softened. Add ham and frozen vegetables. Cook until the vegetables are defrosted. Stir eggs and rice together and add to mixture in pan. Form into four patties. When underside is browned, carefully turn. (The mass is a bit soft.) Place a tablespoon of cheese on top of each patty. Cook until the cheese is melted and the bottom is browned.

Serves two.
