Pumpkin Bread Muffins

Number of Servings: 12

Ingredients

    Cleaner version is:

    1 3/4c. whole wheat flour
    1 tsp. baking soda
    1 c. raw sugar or artificial sweetener
    3/4 sea salt
    1 tsp. cinnamon
    1 tsp. pumpkin pie spice
    8 oz canned pure pumpkin no salt added
    2 beaten eggs
    1/4 grapeseed oil
    1/4c. unsweetened applesauce
    1/3c. water

    Optional
    1/4c. raisins
    1/2c. chopped walnuts

Directions

Makes 12 muffins.

Mix all dry ingredients and then add wet ingredients until combined. Add raisins and/or nuts if desired. Pour into lightly greased muffin pan or into paper lined pan. Bake at 350 about 25 minutes. Place on rack to cool. Freezes well :)
