Granpattie's Chili

Submitted by: GRANPATTIE

Introduction

This is what I've made for my family for more than 30 years.
Don't stick your nose up at the corn until you try it...I did and then I loved it.

As written, this will make a 61/2 qt pot...it's just what I do. You could easily make a smaller batch...or bigger!

Using the organic versions of the beans, tomato sauce and puree cuts the sodium. If you use regular, you'll have to add 200 mg. of sodium per CUP of chili. So the trade off is a few more cents a can vs. 200 mg of sodium per CUP. We didn't notice the difference when I made the switch.

The seasonings are all estimates. I am a "dump" cook. I just add a litle of this and a little of that until it tastes right.

Ingredients

    1 Tbls. canola oil
    1-1/2 lbs. beef, ground round
    2 large onions, diced
    1 large green pepper, diced
3 cans Organic, red kidney beans, drained & rinsed
2 cans Organic pinto beans, drained & rinsed
1 can Organic black beans, drained & rinsed
1 can Organic great northern beans
    drained&rinsed
1 28 oz. can Organic tomato puree
2 28 oz. cans Organic tomato sauce
    4 Tbls chilli powder
    1 tsp. ground cumin
2 tbls. low sodium worcestershire sauce
    4 tbls. brown sugar

Directions

1. Dice the pepper and onion.

2. Place the canola oil, peppers, onions, and ground beef
into large pot (6-8 qt.) Saute over medium heat until
the meat is no longer pink.

3. Add beans, corn, tomato sauce and tomato puree; stir to
combine.

4. Add seasonings, including worcestershire sauce and
brown sugar. Stir to combine.

5. lower heat to a simmer, cover and let chili simmer for
around 60 minutes. This will finish cooking the onions
and peppers and let the flavors blend.

Play with the ingredients...make it your way. If you like it thicker, use only puree or just less sauce. Thinner? Use only tomato sauce or add a little water. Use type and amount of beans that YOU like. If you don't want it at all sweet, leave out the brown sugar. There are a million ways to enjoy chili. This is mine.

Makes approx. 28 1-cup servings.
