Number of Servings: 2
Ingredients

1/2 lb. Scallops
1/2 c. Skim milk
2 Tbls. Flour
1 Tbls. Olive Oil
1/2 c. White Wine
1/2 c. shallots, chopped
2 Tbls green onions, chopped
2 tsp. fresh parsley
Lemon Juice
Pepper
Directions
1. With a cleaver, flatten scallops.
2. Dip them in milk and roll in flour.
3. Saute scallops in olive oli for about 2 minutes, turning once to brown other side. Transfer scallops to a dish.
4. Pour white wine into skillet. Place shallots, green onion and parsley in skillet with wine. Simmer for a minute or so and pour over scallops.
5. Season to taste with lemon juice and pepper.
Serve with a nice salad or steamed vegetables for a lovely meal.
