Pumpkin Chocolate Chip Cookies

Introduction

Pumpkin pie and chocolate chip cookies in one! These are more like a cake/muffin than a cookie. I believe they taste best when they are cold from the refrigerator. Ingredients

    1 1/4 cup cooked pumpkin or canned pumpkin (not pumpkin pie mix)
    4 T + 1 t Truvia (equals 2/3 cup white sugar)
    1/3 cup brown sugar
    1 egg
    1/2 cup applesauce
    2 cups whole wheat flour
    2 t baking powder
    1 t cinnamon
    1 t nutmeg
    1 t ginger
    1 t pumpkin pie spice or allspice
    1/4 t salt
    1 t baking soda
    1 t Almond Breeze (unsweetened original)
    1 T vanilla extract
    1 cup semi sweet chocolate chips
    1/2 cup chopped walnuts (optional)

    2-3 drops of red food coloring for more pumpkin coloring (optional)

Directions

Combine pumpkin, Truvia, brown sugar, applesauce, egg and vanilla (and optional food coloring). In a separate bowl stir together flour, baking powder, cinnamon, nutmeg, ginger, allspice and salt. dissolve the baking soda with the Almond Breeze and stir in. Add flour mixture to pumpkin mixture and mix well.

Add chocolate chips and nuts.

Drop by spoonful on greased cookie sheet and bake at 365 degrees F for approximately 12 minutes or until light brown and firm.
