Spinach Potato Soup

Ingredients

1 lb raw potato
1 Tbsp bacon grease
4oz fresh baby spinach
2 cups 2% milk
1 tsp onion powder
1 tsp garlic salt
2/3 cup grated Parmesan cheese
Directions
Peel, chop and boil potatoes. Meanwhile melt bacon grease over medium heat in skillet and add spinach. Cook, stirring constantly, until spinach is wilted down.
When potatoes are done, drain and mix with spinach.
Put potatoes, spinach, and 1 cup of milk in food processor or blender and process until fairly smooth. Return to saucepan and add remaining cup of milk, onion powder, and garlic salt. Bring to a boil. Reduce heat, add cheese, and simmer until cheese is melted. Makes 3.5 one cup servings.
