Applesauce Whole Grain Coffee Cake

Introduction

This is one healthy coffee cake you can enjoy guilt-free! This is one healthy coffee cake you can enjoy guilt-free!

Ingredients

    Topping:
    3 T. chopped pecans (or walnuts)
    1 T. sugar
    tsp. cinnamon

    1 C. all-purpose flour
    2 tsp. baking powder
    tsp. baking soda
    tsp. salt
    tsp. cinnamon
    1-1/2 C. Ezekiel 4:9 cereal, almond or other flavor
    C. sugar
    C. unsweetened applesauce
    C. vegetable oil
    C. skim milk or fat-free milk
    1 egg, slightly beaten
    tsp. vanilla extract

Directions

1. Stir together nuts, 1 T. sugar and tsp. cinnamon for topping & set aside.
2. Mix flour, baking powder, soda, salt and tsp. cinnamon; set aside.
3. In large bowl, mix cereal, sugar, applesauce, oil, milk, egg and vanilla. Add the flour mixture and stir until thoroughly combined. Spread batter in lightly greased 8x8x2-inch baking pan. Sprinkle with reserved topping.
4. Bake in 375 degree F. oven about 28 minutes or until wooden pick inserted near center comes out clean. Cut into 9 squares. Best served warm.
