THIS IS OL'FASHIONED BEEF STEW, A COMFORT FOOD ON A SNOWY DAY. CAN BE DONE IN A SLOW COOKER, AFTER BROWNING STAGE. PUT POTATOS IN LAST & LEAVE ON TOP, IN THAT CASE. NO THICKENER WILL BE NEEDED IF DONE ON STOVETOP. A SMALL AMOUNT OF CORNSTARCH, MIXED IN COOLED BROTH, MAY BE NEEDED IF SLOW COOKER IS USED.     2 MEDIUM POTATOS
    1 LARGE CAROT
    1 SMALL PARSNIP
    1 MEDIUM TURNIP
    1 SMALL ONION
    1 CLOVE ELEPHANT GARLIC OR UP TO 3 CLOVES REGULAR GARLIC
    1 STALK CELERY
    2T.OR SO FLOUR, SEASONED
    SPRIGS THYME & ROSEMARY
    BAY LEAF
    1/4 TEASPOON DRIED & GROUND CHILI PEPPER
    1 CAN CONDENSED BEEF CONSOMME
    1/2 CAN [ 1 CUP] DICED ITALIAN TOMATOS
    PAM
    WATER AS NEEDED

Directions

CUT BEEF INTO SPOON-SIZED PIECES, SHAKE A HANDFULL AT A TIME IN A BAG WITH THE SEASONED FLOUR & BROWN WELL IN A NON-STICK SKILLET SPRAYED WITH PAM OLIVE OIL. CUT ONION IN LIKE SIZED PIECES & ADD WHEN BEEF IS NEARLY BROWNED. STIRRING, COOK UNTIL ONION IS AMBER & CARMELIZED. CUT CARROT, TURNIP, PARSNIP & CELERY IN LIKE SIZES & ADD WITH CAN CONSOMME & 1 CUP OF THE TOMATOS [RESERVE REMAINING TOMATOS FOR ANOTHER USE]. FILL THE SOUP CAN WITH WATER, ADD THE WATER & STIR ALL TOGETHER. TURN DOWN TO @300* AND LET SIMMER A COUPLE OF HOURS ON STOVE OR 6 TO 8 HOURS IN A SLOW COOKER UNTIL MEAT IS NEARLY TENDER. PEEL POTATOS, CUT IN SPOONABLE HUNKS AND ADD. ADD ADDITIONAL WATER IF NEEDED TO COVER. COOK UNTIL POTATOS ARE TENDER. SERVE WITH A SALAD AND FRESH FRUIT. FRENCH BREAD, TOO, IF CALORIES ALLOW.
