Mexican Lasagna

Introduction

Bored with my usual rotation of meals, I found this on the internet, but adapted it for lower calories using ground turkey breast & 2% cottage cheese. My family loved it, froze half of it and reheated in the oven for another meal. Number of Servings: 6

Ingredients

    1 lb. ground turkey breast
    1/2 onion diced
    1 can petite diced tomatoes
    4 tbsp olive oil
    1 envelope of taco seasoning
    10 corn tortillas
    2 eggs
    1 C 2% cottage cheese
    1 C shredded cheddar cheese




Directions

Pre-heat oven to 350. Grease a 9x13 casserole dish with pam. Brown turkey meat and onions with olive oil. Add one can of petite diced tomatoes to turkey mixture. Layer 6 tortillas on bottom of dish and add turkey mixture. Add a very light layer of cheese to top of meat. Layer 4 tortillas on top.

Beat 2 eggs with cottage cheese. Stir in half of the cheddar cheese, Pour over the top of the casserole. Top with the rest of the cheese. Cover with foil & bake in oven for 45 min or when a knife stuck into the middle comes out clean. Take off foil for the last 5 minutes to brown if desired.
Makes 6-8 servings. (Freezes nicely.)
