Gnocchi with spicy tomato sauce

Ingredients

    - 1 can of tomatoes
    - half a large onion, diced
    - 1 clove of garlic, peeled and diced
    - half a small red chilli, seeds removed and diced
    - 1 tbsp of olive oil
    - a pinch of dried rosemary or a twig of fresh rosemary
    - 1 whole bay leaf
    - 1 bag of gnocchi
    - salt and pepper to taste

Directions

1) Heat olive oil in a medium sauce pan. Add onions and stir until clear, then add garlic and chilli. Saute whilst stirring until garlic turns brown, but be careful not to burn it, as this will make the dish bitter.

2) Add a can of tomatoes, rosemary and bay leaf. Leave on a low heat to simmer for about 45 minutes with no lid on.

3) Shortly before serving, bring a large pot of water to the boil. Add gnocchi and leave for two minutes or until they start floating at the top of the water.

4) Remove bay leaf and rosemary twig (if used) from sauce. Add salt and pepper to taste. Drain gnocchi and serve with the sauce.
