Spicy Flank Steak

Introduction

To give the meat a Jamaican flavor, use Pick-a-Peppa sauce instead of hot pepper. A different, tasty way to enjoy flank steak when you're tired of the same ole London broil. Ingredients

    1 1/2 lbs flank steaks
    4 garlic cloves, crushed
    3 tablespoons chopped scallions (green onions)
    2 tablespoons low sodium soy sauce
    1 tablespoon extra virgin olive oil
    1 teaspoon hot sauce or 2 tablespoons hot jerk seasoning

    Dry Rub Seasoning
    2 tablespoons paprika
    2 tablespoons kosher salt
    1 tablespoon black pepper
    1 tablespoon onion powder
    2 tablespoons garlic powder
    1 tablespoon cayenne pepper
    1 tablespoon dried oregano
    1 tablespoon ground thyme

Directions

Combine dry rub ingredients. Rub on both sides of steak, covering generously.

In a small bowl, mix together garlic, onions, soy sauce, olive oil and hot sauce.

Spread mixture over both sides of the flank steak. Marinate overnight.

Cook meat 7 minutes per side on a medium grill.

Slice meat thinly against the grain for maximum tenderness.
