Broccoli Soup

Ingredients

1 Tbsp olive oil
2 onions chopped
2 potatoes peeled and chopped
2-3 cups vegetable stock (I used homemade)
1 tsp salt
1tsp black pepper
3 cups broccoli chopped
Directions
Heat olive oil and add potatoes, garlic and onions. Cook until onions are soft. Add broth, salt and pepper and bring to a boil. Reduce heat and simmer until potatoes are tender. Add broccoli and cook until desired tenderness.
Blend with a hand blender, or in batches in a regular blender.
