Ingredients
-
pie crust, Pillsbury 9" refrigerated, 1/8 crust, 16 serving
Apples, fresh, 6 medium (2-3/4" dia) (approx 3 per l
Cranberries, dried, sweetened (craisins), 0.13 cup
Raisins, .13 cup, packed
Apricots, dried, .5 cup, halves
Cinnamon, ground, .5 tsp
Nutmeg, ground, .25 tbsp
Butter, salted, 1 pat (1" sq, 1/3" high)
Apple juice, unsweetened, .5 cup
Cornstarch, .05 cup
Granulated Sugar, 0.375 cup
Sugar in the Raw (Turbinado Sugar), 1 tsp
Directions
Take pie crusts out of refrigerator and allow to come to room temperature
Peel, core, slice apples (I left the skin on one apple)
Keep in water with a couple of tablespoons of vinegar or lemon juice while prepping the rest.
Drain, rinse, and place in a bowl with cinnamon, sugar and nutmeg.
Soak raisins, craisins, dried apricots in a half cup of water and a quarter cup of port (optional).
After dried fruit is plumped, mix with apple mixture.
Either sprinkle cornstarch in with the apple dried fruit mixture or reduce the apple juice by half, mix cornstarch and heat until thickened
Mix with the fruit, spice, sugar mixture.
Place the bottom crust in a pie plate, bake at 400 degrees for 15 minutes. I used dried beans to keep the crust flat.
Remove from oven
Fill crust with apple mixture.
Place top crust, flute edges, slash vents, decorate if you wish to do so.
Bake for 20 minutes at 400 and reduce to 350 for 20 minutes.
