Ingredients

    1 Tbsp. reduced-calorie margine
    2 medium onions, sliced
    3 medium Yukon gold potatoes, unpeeled and cut 1-inch cubes
    1 (14-1/2 ounce can) reduced sodium chicken broth
    1/2 tsp. minced fresh tyme
    1/4 tsp. salt
    1/4 cup reduced fat cheddar cheese
    1/4 tsp. black pepper

Directions

Melt margarine in a large skillet over medium heat; add onions and cook 20 minutes or until golden, stirring often. Add potatoes and remaining ingredients; cover, reduce heat, and simmer 30 minutes. Uncover, increase heat to high and simmer 3 to 5 additional minutes or until liquid is absorbed. Sprinkle with 1/4 cup reduced fat cheddar cheese before serving. Yield; 8 (1/2 cup) servings.
