Pulled Pork Shephard's Pie

Ingredients

    4 servings (approximately 2-3 cups) BBQ Pulled Pork
    2 bags frozen mixed vegetables, thawed
    2-3 lbs sweet potatoes
    6 TBSP Smart Balance light butter spread, divided
    1 TBSP Trader Joe's 21 spice (or your favorite mix of herbs/spices), divided
    1/2 TBSP Course Sea Salt

Directions

Boil sweet potatoes in skin until fork tender. Peel potatoes and roughly dice into a large bowl. Combine potatoes with 5 TBSP Smart Balance and 1/2 TBSP 21 spice and sea salt, using a hand mixer or potato masher. Set aside.

Put pulled pork in the bottom of a large casserole dish. Top pork with thawed mixed vegetables, seasoned with 1/2 TBSP of 21 spice. Top vegetables with mashed sweet potatoes. Dot potatos with remaining TBSP of Smart Balance. Bake at 375 for 45 minutes. Makes 8 approximately 1-1/2 cup servings.

I love TJ's 21 Spice and use it in a lot of my cooking but if you don't have a Trader Joe's near you or don't like the flavor, you can substitute your favorite spice mixture (Mrs. Dash, McCormicks, etc.)
