Basic Butternut Squash Soup

Introduction

This is my first attempt at squash soup, so the herbs will probably change. This is my first attempt at squash soup, so the herbs will probably change.
Number of Servings: 2

Ingredients

    1 butternut squash, peeled, deseeded, and cubed
    1 cup homemade vegetable stock
    1 T fresh rosemary
    1 T fresh parsley

Directions

1. Combine squash and stock in a pot, bring to a boil.

2. Cook for 20-25 minutes, until squash is very tender. Stir vigorously, until squash begins to liquify.

3. Run squash and stock through a food processor until smooth and creamy. Return to saucepot.

4. Add rosemary and parsley, simmer for 15-20 minutes.
