Puy Lentils with Red Onion

Introduction

If you can't obtain puy lentils, any green lentil will be fine If you can't obtain puy lentils, any green lentil will be fine
Number of Servings: 1

Ingredients

    15ml (1 tbsp) olive oil
    2 red onions, sliced
    350g (12 oz) Lentils Vert du Puy or large green lentils
    600ml boiling water and 1 stock cube
    salt and pepper

Directions

Put oil in saucepan, add onions and fry for 5 minutes until softened and browned. Add lentils and stir into onion, continuing to cook for one minute. Add stock and bring up to the boil. Simmer gently for 30 minutes (20 minutes for green lentils) Season.

Makes 6 one cup servings
